Lemon (Limone)
Fresh lemon is a fundamental flavour element in Italian cooking — used for juice and zest across pasta, seafood, desserts, and salads. The zest carries the concentrated aromatic oils; the juice provides acidity without the tannin of vinegar.
Culinary Use
In Italian pasta cooking, lemon appears most prominently in pasta ricotta e limone — where zest and juice are worked into the ricotta to create a light, bright sauce. The acidity of lemon juice cuts through the richness of the ricotta and lifts the overall flavour. The combination of lemon, ricotta, and Parmigiano is one of the few applications where citrus and aged cheese work together without conflict.
Lemon zest is always preferred over juice alone in cooked applications: the oils in the zest are more stable under heat and provide a deeper citrus note. For most pasta applications, use both — zest for aroma, juice for acidity.
Varieties
Standard retail lemons — the usual supermarket product, origin varies by season (Spain, Turkey, Italy). Mid-range quality, reliable flavour.
Sicilian lemons (Limone di Siracusa IGP, Limone dell'Etna DOP) — larger, more aromatic, thicker zest. Price €4–8/kg. Preferred for desserts and high-end cooking.
Amalfi lemons — the reference lemon for limoncello and premium applications. Very large, intensely aromatic. €8–15/kg.

Selection and Storage
Choose lemons with a bright yellow colour, firm skin, and no soft spots. Unwaxed lemons are preferable if using the zest. Store at room temperature for up to a week, or refrigerated for 3–4 weeks.
Cost Context
At €2.20/kg, two lemons (approximately 200g) cost approximately €0.44 — around €0.11 per serving for a 4-serving recipe. Lemon is among the lowest-cost flavour contributors in the Italian recipe repertoire.
