Spinach (Spinaci)

Spinach is one of the most widely used leafy vegetables in Italian cooking — appearing in pasta sauces, frittate, stuffed pasta fillings (ravioli, cannelloni), torte salate, and gnocchi verdi. Its mild, slightly earthy flavour pairs naturally with ricotta, eggs, and aged cheeses.

Culinary Use

Fresh spinach wilts dramatically when cooked: 250g of raw leaves reduces to approximately 60–70g cooked. This means recipes typically use 200–300g raw for 4 servings, even when cooked spinach is the intended result.

For pasta sauces: Fresh spinach can be stirred directly into a hot pan with a small amount of oil or butter for 1–2 minutes until just wilted. It should retain its bright green colour — extended cooking turns it grey-brown and produces a sulphurous note.
